That’s exactly what happened to Danica Lucero, a talented student from CCA Manila, whose world was turned upside down (in the best way possible!) when she heard the legendary Gordon Ramsay call her name on stage. It wasn’t a dream, it was the reality of winning the high-stakes Halo-Halo Challenge during the celebrity chef’s highly anticipated visit to Manila last January.

Her winning dish? A truly unique Kamias Halo-Halo creation that stood out among entries from renowned content creator Ninong Ry, esteemed actress Judy Ann Santos, and even Bea Qua, the head chef for Gordon Ramsay Philippines. When Danica’s name echoed through the room, the applause was thunderous, punctuated by triumphant hoots from her proud classmates. It was a moment of pure, unadulterated shock and joy, setting the stage for an incredible culinary journey.

 

The Unexpected Call: A Secret Mission with a Culinary Titan

Danica’s disbelief was palpable, and honestly, who could blame her? She only learned about the competition less than two weeks before it happened, through a seemingly ordinary phone call with her school’s program coordinator, Chef Kerwin Funtanilla. Little did she know, this wasn’t just any “certain event.”

“I only knew that a ‘certain event’ was coming up, and they needed me to represent the school,” Lucero shared with Rappler. “What seemed to be a normal briefing turned out to be the greatest shock of my life when he told me that the chef involved is none other than Chef Gordon Ramsay. Believe me when I say my initial response was, ‘Prank ba ‘to?’ (Is this a prank?)”

Can you imagine the jolt? At that time, Ramsay’s visit to the Philippines was a closely guarded secret, adding another layer of surrealism to the news. Details about the event were scarce, save for one crucial instruction: she had to prepare a unique version of halo-halo. “All along, I thought it was simply a presentation of how versatile halo-halo can get. I even thought that the whole thing would be taped and would only be shown through one of Chef Gordon’s TV shows,” Danica recalled.

 

Silencing Self-Doubt: Ramsay’s Timeless Advice

As the days dwindled before the challenge, the inevitable monster of self-doubt crept in. “I was starting to question what a student like me was doing there and why God thought I was deserving enough to be in that position,” she admitted. Sounds familiar, right? That classic imposter syndrome hitting hard before a big moment.

To calm her nerves, Danica did what any modern student would do: she searched for Gordon Ramsay videos online. Serendipitously, she stumbled upon a clip where he advised aspiring chefs to “act like a sponge”, absorbing experiences rather than fixating on money or titles. This wasn’t just cooking advice; it was life advice. “More than the physical preparation needed for the cook-off, what I focused on more was the mental strength needed to beat the imposter syndrome I was feeling. At this point, I wasn’t even thinking about winning, I just wanted to pull off everything the best way I know how.” That shift in mindset, friends, is often the secret ingredient to true success.

 

The Halo-Halo Showdown: A Privilege, Not Just a Competition

Stepping onto the stage, sharing the spotlight with culinary titans and household names, was an experience Danica describes as “surreal.” “The thought of me, a graduating culinary student, sharing the stage with Chef Ry, Chef Judy Ann, and Chef Bea felt like a huge privilege,” she explained. “I took it as a challenge and told myself that I needed to keep up with these already great individuals. So, it was unexpected when I was announced as the winner.”

But for Danica, the deeper meaning transcended the mere act of winning. “In the bigger scheme of things, I hardly saw the whole event as a competition. It was an honor and a blessing because that opportunity is not freely given to anyone. For a student and an aspiring chef, being able to cook for Gordon Ramsay is a win in itself.” This perspective, valuing the experience over the outcome, is a testament to her humility and true passion.

 

The Kamias Kicker: How a Filipino Fruit Charmed Ramsay

The win didn’t truly hit her until after the event, when her phone exploded with congratulatory messages. The media buzz was instant, and as Ninong Ry wisely predicted backstage, this challenge would “change the trajectory of [her] career for the better.” And he was 100% right.

So, what was the magic behind her kamias halo-halo that captivated Ramsay? It was a dish born from a deep love for, and understanding of, Filipino cuisine. “As Filipinos, we love anything maasim (sour), from sinigang to paksiw to pinangat,” Danica explained. “So, when we were asked to bring in a unique ingredient, I thought: why not add a big contrast to the sweet halo-halo? Something unexpected, but also something that truly represents the Philippines. Our cuisine is endless in flavors.”

She knew she wanted a sour element, something distinctly Filipino. After researching, kamias emerged as the clear winner. “It’s one of those fruits that is widely available yet greatly overlooked by Filipinos. We let kamias trees silently grow in our backyards,” she mused. What an astute observation! Why not give this humble, often-ignored fruit its moment in the spotlight? “Bringing kamias compote to the halo-halo challenge was also my way of showing people that our country is home to thousands of interesting food sources.” It was a bold move, a culinary statement, and it paid off beautifully.

 

Say Hello to Say Halo!: A Dream Unfolds

Before the competition, Danica was a graduating student, pondering her career path: corporate chef or traditional kitchen? Weeks of uncertainty passed, until a serendipitous phone call from her mom’s best friend, Tita Jess, introduced her to a business partner who saw the Ramsay challenge and was looking to start a halo-halo venture. “Months later, and Say Halo! was born,” Danica recounted. It truly felt like destiny calling.

Say Halo! isn’t just a business; it’s Danica’s “first baby,” a platform for her winning kamias halo-halo and other Filipino-inspired icy desserts. Think turon halo-halo and buko pie halo-halo – reimagined classics that are both “unique and innovative,” balancing tradition with fun, modern twists.

This is an artisanal halo-halo brand, designed to offer an “elevated experience of the traditional merienda.” Her signature kamias halo-halo is a symphony of flavors and textures, featuring nata de coco, macapuno strings, sago, dulce de leche, langka, the star kamias compote, coconut sauce, leche flan, and pinipig. It’s an adventure in every spoonful!

“We develop ingredient components that have unique flavor profiles but still really reflect our Filipino roots,” she proudly shared. “That’s how the Kamias Halo-Halo came about, and after that, with Say Halo!, we kept going with fun twists like the Turon Halo-Halo and Buko Pie Halo-Halo. We also make sure there’s always a good mix of textures, too, so every spoonful feels exciting and satisfying.”

The business officially debuted at the ArteFino Fair in Rockwell in early August, and the reception was overwhelmingly positive. “We were so blessed by the continuous increase of support during the four-day fair that some of our flavors got sold out!” Danica exclaimed. “Having our debut at an event like ArteFino made it all the more special, especially since they share the same vision as ours to push Filipino craftsmanship, whether that be in the form of apparel or food.”

 

From Davao Kitchens to Culinary School: Danica’s Flavorful Foundations

While the Ramsay challenge was a pivotal moment, Danica’s journey into the culinary world began much earlier, rooted deeply in her childhood. Born and raised in Davao City, she moved to Manila at nine. Her ancestral home in the province, a “house of houses” where four families coexisted, was her first culinary classroom. “I grew up in a vibrant environment with all of my cousins, titos and titas (uncles and aunts), and grandparents around, who are all foodies,” she fondly recalled. “I saw firsthand how food has the power to pull everyone together at the dining table.”

She credits those long hours of shared meals, where good food was a constant, for her burgeoning love of cooking. During Christmas, each of the four households would proudly present their specialty dishes at midnight, turning the celebration into a delectable feast. “I remember being a curious and giddy 6-year-old kid. I would visit each house and offer what little help I could in the kitchen,” she said. “From removing malunggay leaves from their stems to wrapping lumpiang shanghai – all of it I learned at an early age. I wasn’t just exposed to food, I was emotionally invested in it because it was what brought us closer as a family.” Even then, she understood food’s magnetic power to unite people.

It wasn’t until the pandemic hit, with its quiet lull, that she truly found her calling. Then a psychology student preparing for medical school, she faced a crucial question: “Am I on the right path?” She admitted her heart wasn’t truly in it. “With all the fuss going on at that time, I found my therapy and solace in kneading dough and baking cookies.”

Like many during lockdown, she dabbled in popular home-baking trends: ube cheese pandesal, red velvet crinkles, chocolate chip cookies. But her culinary compass soon pointed towards savory dishes like pasta and classic Filipino meals. “Time went by, and all the YouTube videos and articles about food I came across online just weren’t enough for me anymore,” she explained. “I had this urge to know the depths of each cuisine and discover just how food is greatly related to our being. That itch for knowledge is what led me to my journey at the Center for Culinary Arts Manila (CCA Manila).”

While she explored various culinary arts, it was pastry that truly captured her heart. “The pastry side of the kitchen is what ignited my passion for cooking, and it’s still what excites me the most. There’s a different discipline and precision needed as a pastry chef, it’s challenging and pleasing at the same time.”

 

Mentors and Muses: The Pillars of Her Strength

Beyond the immediate culinary figures, Danica draws profound inspiration from the strong women who raised her: her lola (grandmother) and titas. “They are superheroes in my eyes for their ability to make people happy through their food.”

She also credits her mentor, Chef Miguel Lorino, for shaping her confidence and creativity. Early in her CCA journey, he pushed her to join an in-school competition. “The thought and intimidating feeling of competing with other students way higher than my level was enough for me to reject the invitation,” she confessed. “But he was adamant enough that I join not to win titles or claim bragging rights but to teach me that trying is more valuable than winning.” That lesson, undoubtedly, paved the way for her incredible success on the Gordon Ramsay stage.

 

What’s Next for Danica Lucero and Say Halo!

Looking ahead, Danica is filled with excitement but remains admirably grounded. She understands that true learning in the kitchen extends far beyond a diploma; the most valuable lessons are forged outside the classroom, in the real world of creating and serving. Yet, her vision is clear: “My dream is to open a bistro and a speakeasy bar. That’s still far down the line, but it’s something I’m willing and excited to work hard for.”

For now, Say Halo! will continue to focus on its namesake: ingenious halo-halo creations, with even more unique flavors on the horizon. This focused expansion reflects Danica’s broader philosophy on career and life: to constantly expand your boundaries. “You need to constantly defy what you thought you could do and what’s possible. More often than not, what stops us from taking big steps is our own limiting beliefs. We often put ourselves in a box and let ourselves get comfortable in it,” she wisely observed.

And this same concept, she believes, applies beautifully to food. “We’ve become comfortable with the idea that halo-halo is just an overwhelming mix of sweet ingredients. But who’s to say it can’t be reinvented? Letting your creativity run wild in an unapologetically good way is how you’ll end up creating the next big thing.” Danica Lucero’s journey is a vibrant testament to this truth, proving that a humble fruit, a brave student, and a sprinkle of unwavering passion can truly create culinary magic.
